8.11 Fridges Cleaning & Maintenance

Purpose

This SOP establishes procedures for cleaning and maintaining refrigerators to ensure food safety, prevent cross-contamination, and maintain optimal temperature control.

Scope

Applies to all staff across all Little Coffee Bean Co locations.

Equipment Required

  • Cleaning cloth
  • Hot water
  • Sanitiser solution
  • Food-safe degreaser
  • Gloves
  • Thermometer
  • Waste bag

Daily Cleaning Procedure

Throughout Service

  1. Wipe up any spills immediately
  2. Check temperature is 0-5°C
  3. Ensure door seals properly

End of Shift

  1. Remove all items from fridge
  2. Check expiry dates and discard expired items
  3. Wipe shelves with damp cloth
  4. Wipe walls with damp cloth
  5. Wipe exterior with damp cloth
  6. Return items in organised manner
  7. Check temperature reading

Weekly Deep Clean

  1. Remove all items and check expiry dates
  2. Discard any expired or questionable items
  3. Remove all shelves and drawers
  4. Soak shelves in hot water with sanitiser for 10 minutes
  5. Scrub with cloth to remove residue
  6. Rinse thoroughly
  7. Wipe interior walls with sanitiser solution
  8. Wipe interior floor thoroughly
  9. Dry all components
  10. Reassemble shelves and drawers
  11. Wipe exterior with degreaser
  12. Return items organised by type
  13. Check temperature

Monthly Deep Clean

  1. Complete weekly deep clean procedure
  2. Check door seals for damage
  3. Inspect condenser coils (back of fridge)
  4. Vacuum condenser coils if accessible
  5. Check all drainage holes are clear
  6. Test temperature accuracy with thermometer

Quality Checks

  • Temperature maintained at 0-5°C
  • No visible spills or residue
  • No odours
  • Door seals intact
  • Items organised and dated
  • No expired items

Safety Notes

  • Wear gloves when cleaning
  • Never use harsh chemicals
  • Report temperature fluctuations immediately
  • Keep fridge door closed when not in use
